To use the vanilla beans, cut them lengthwise with a knife, open them and scrape out the black seeds with the back of the blade to add them to sweet preparations. The empty pod can be infused in hot milk to flavour it, dried and ground, or placed in a jar of sugar to make vanilla sugar.
